Cheesecake

Cheesecake in the Peace Corps?  Oh my, yes.  Every chance I get.

Ingredients

2 500-mL pouches chambiko (a cultured milk product)
2 eggs
1 cup sugar
2 Tbsp lemon juice
1 tsp imitation vanilla flavor

Directions

Strain the chambiko overnight through a clean cloth.  This makes a substance resembling a soft cream cheese.

Combine the strained chambiko with the other ingredients and mix until smooth with a fork.  Pour into a small pan.

Place the pan into a slightly larger pan containing water and a spacer to keep the baking pan off the bottom.  There should be enough water to come up the side of the baking pan about 2 cm.  Place the water-containing pan into a larger pan with 1–2 cm sand on the bottom.  Cover all pans with a flat metal lid.  Set the assembly on a mbaula.  Place hot coals on the lid.  Bake over coals or a moderate fire, replenishing the hot coals on the lid as necessary.

When the cheesecake is done, it will be set all the way to the center and a knife blade inserted into the center will come out clean.  Remove from heat and allow to cool thoroughly before devouring.
