This slightly sweet snack satisfies your hunger pangs at any time of the day.
1 Tbsp ground cinnamon
1 tsp ground nutmeg
1 tsp ground cardamom
¼ cup sugar
1/8 cup water
1 tsp imitation vanilla extract
500 g groundnuts
1 Tbsp cooking oil
Combine the ground cinnamon, nutmeg, and cardamom in a small cup. Set aside.
Combine the sugar and water in a small pot. Place over a low fire or an alcohol burner. Heat, with stirring, until the sugar dissolves in the water. Remove from heat and stir in the vanilla flavoring. Set aside.
Combine the groundnuts and cooking oil in a large pot over a medium fire. cook, stirring constantly, until the groundnuts are roasted. You will be able to tell that they are nearly done when they become darker, you hear “popping” sounds, and they become fragrant, but the most certain way is to taste them.
As soon as the groundnuts are barely roasted, add the sugar syrup. The fire should be medium or low, not hot. The syrup will boil and bubble; stir constantly to mix and continue stirring until the sugar crystallizes. Remove from the fire. Immediately add the ground spices to the hot groundnuts and stir to mix. Allow to cool.
